For the Chimichurri Sauce
- 1 bunch of Fresh Parsley Fresh and leafy, for chimichurri sauce
- 4-5 cloves Garlic Fresh cloves for chimichurri sauce
- 1/2 cup Olive Oil For chimichurri sauce
- 1 tsp Red Pepper Flakes For a little heat in chimichurri sauce
- to taste Salt & Pepper For seasoning chimichurri sauce
For the Pizza Base
- 1 Pizza Dough Store-bought or homemade dough
- 8 oz Mozzarella Cheese Fresh mozzarella, sliced
- 2-3 Fresh Tomatoes Sliced thinly
- 1 Olive Oil For brushing on pizza dough
Prepare Chimichurri Sauce: Blend parsley, garlic, and olive oil in a food processor. Stir in red pepper flakes, salt, and pepper.
Prep Pizza Dough: If store-bought, let the rest at room temperature for 30 minutes. If homemade, prepare the dough and let it rest.
Roll and Shape Dough: On a floured surface, roll out the dough into a 12-inch circle.
Assemble the Pizza: Spread chimichurri sauce over the dough, leaving a small border. Add mozzarella and tomato slices (and optional toppings).
Bake Pizza: Preheat oven to 475°F. Bake for 10-12 minutes or until the crust is golden and cheese is melted.
Garnish and Serve: Drizzle with more chimichurri sauce, garnish with chopped parsley, slice, and serve.
- For a gluten-free option, use gluten-free pizza dough.
- To make it low-carb, use a cauliflower crust.
- Swap mozzarella with vegan cheese for a dairy-free version.
- Optional toppings: grilled chicken, steak, artichokes, or olives for extra flavor.
