Equipment

  • 1 Pot For browning beef and simmering the soup.
  • 1 Spoon or Spatula To break apart the ground beef and stir ingredients.
  • 1 Knife For chopping vegetables.

Ingredients
  

  • 1 lb Ground Beef Choose a good quality ground beef.
  • 2 Chipotle Peppers Use dried chipotles or chipotle in adobo sauce.
  • 1 Onion Chopped for the flavor base.
  • 2 cloves of Garlic Minced for extra flavor.
  • 2 Bell Peppers Chopped to add sweetness and texture.
  • 1 can Tomatoes Chopped for acidity and texture balance.
  • 4 cups Broth Beef broth chicken broth, or vegetable broth depending on preference.
  • 1 tsp Cumin For warmth and earthiness.
  • 1 tsp Paprika To enhance the flavor with a hint of sweetness and smokiness.
  • 1/2 tsp Oregano For a herby depth of flavor.
  • 1 tsp Chili Powder Optional to add more spice.
  • To taste tsp Salt To enhance the flavors.
  • To taste tsp Pepper Freshly cracked black pepper for seasoning.

Instructions
 

  • Brown the ground beef in a pot over medium-high heat, breaking it up with a spoon. Once browned, drain any excess fat.
  • Add chopped onions, garlic, and bell peppers to the pot and sauté until softened.
  • Stir in chipotle peppers (or chipotle powder), cumin, paprika, oregano, chili powder, salt, and pepper. Cook for 1-2 minutes to toast the spices.
  • Add tomatoes and broth. Stir everything together and bring it to a simmer.
  • Simmer the soup for 30-45 minutes to allow the flavors to meld and the beef to become tender.
  • Adjust seasoning as needed and serve with your choice of garnishes, such as avocado, cilantro, and lime.

Notes

  • You can adjust the heat level by using more or less chipotle peppers or chipotle powder.
  • Add sour cream or cheese to balance the spice if desired.
  • For a milder version, use chicken or vegetable broth instead of beef broth.
  • This soup freezes well for up to 3 months.
