Ingredients
  

  • 1 lb Italian sausage Mild or spicy depending on preference.
  • 1 cup Heavy cream Creates a creamy soup base.
  • ½ cup Parmesan cheese Freshly grated for maximum flavor.
  • 4 cups Chicken broth Can be substituted with vegetable broth.
  • 1 Onion Finely chopped for flavor foundation.
  • 2 cloves of Garlic Minced for aromatic depth.
  • 1 cup Ditalini pasta Any small pasta works as a substitute.
  • 2 cups Spinach Fresh adds color and nutrients.
  • 2 tbsp Olive oil For sautéing onions and garlic.
  • To taste Salt & pepper For seasoning and balancing flavors.

Instructions
 

  • Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent (3–4 minutes). Stir in minced garlic and cook until fragrant (1–2 minutes).
  • Brown the Sausage: Add Italian sausage to the pot and break it into chunks. Cook for 5–7 minutes until browned and cooked through.
  • Add Broth and Pasta: Pour in chicken broth, stir, and bring to a simmer. Add pasta and cook until al dente, stirring occasionally to prevent sticking.
  • Stir in Cream and Parmesan: Lower heat and mix in heavy cream and Parmesan cheese. Stir until smooth and creamy.
  • Add Spinach and Simmer: Add fresh spinach, stir, and let simmer for 3–4 minutes. Adjust seasoning with salt and pepper.

Notes

  • The soup tastes even better after sitting for a few hours, so feel free to make it ahead.
  • Adjust the cream and cheese amounts to match your desired consistency.
  • Leftovers can be stored in the fridge for 3 days or frozen for up to 3 months.
