1 Mixing Bowl Large enough to hold all the ingredients
1 Baking Sheet Lined with parchment paper for easy cleanup
1 Oven Preheated to 350°F (175°C)
- 1 Cup Rolled Oats Use old-fashioned rolled oats for best texture
- 1 Cup Dried Cherries Chopped if large or whole for a chewy bite
- 1/2 Cup Butter or coconut oil Softened to room temperature
- 1 Cup Brown Sugar You can use white sugar for a lighter taste
- 1 Large Egg Room temperature
- 1 Tsp Baking Soda
- 1/2 Tsp Cinnamon For warm flavor
- 1/4 Tsp Salt Optional but enhances flavor
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine butter and brown sugar, and beat until smooth.
Add the egg and mix well.
Stir in oats, dried cherries, cinnamon, baking soda, and salt.
Drop spoonfuls of dough onto the prepared baking sheet.
Bake for 10-12 minutes, or until golden brown.
Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
- You can substitute coconut oil or dairy-free butter for a vegan version.
- For best texture, avoid overmixing the dough and don’t flatten the cookies before baking.
