Equipment

  • 1 Large Pot To cook and combine all ingredients.
  • 1 Knife For chopping vegetables (optional).
  • 1 Can Opener To open cans of beans, tomatoes, etc.

Ingredients
  

  • 1 lb - Ground Beef or Chicken Can substitute with ground turkey or plant-based alternatives for a lighter option.
  • 2 cans 14.5 oz Canned Tomatoes Use diced or crushed based on preference.
  • 1 can 15 oz Black Beans Drain and rinse before adding to the soup.
  • 1 can 15 oz Corn Drain and rinse before adding.
  • 1 packet - Taco Seasoning Use your favorite store-bought taco seasoning mix.

Instructions
 

  • Prepare Your Ingredients
  • Chop your veggies, drain the beans, and open the cans of tomatoes and corn.
  • Cook Your Protein
  • In a large pot, cook your ground beef or chicken over medium heat. Stir occasionally, breaking it into small pieces as it cooks. Once browned, drain any excess fat.
  • Add the Taco Seasoning
  • Stir in taco seasoning and mix well, then add canned tomatoes. Let cook for 2-3 minutes.
  • Add the Beans and Corn
  • Stir in black beans and corn, then add broth or water to reach your desired soup consistency. Let simmer for 10-15 minutes.
  • Final Touches
  • Taste and adjust seasoning with salt, pepper, or extra taco seasoning if needed.
  • Serve and Garnish
  • Serve in bowls, adding your favorite toppings like cheese, sour cream, cilantro, and a squeeze of lime.

Notes

  • Customization: Feel free to swap out ground beef for ground turkey or chicken for a lighter version.
